Apple and Banana Bake with Nutty Granola

This beautiful fruit bake is great for breakfast and dessert.  I’ve made it a few times now and I’m absolutely in love with it. The crunchy topping tastes amazing with the sweet, baked apples and bananas. The whole thing just really melts in your mouth. It’s really a perfect fall treat, especially with a dollop of  yogurt!

On Monday, My Husband and I decided to go apple picking with my friend’s children at Verger Labonté here in Montreal. The farm was beautiful, clean and the staff was friendly and helpful. What more could you ask for?

We arrive during a long weekend promotion which we didn’t even know about (bonus), free admission for children and the 13-pound bucket for apples was also discounted. I can’t remember the price…oh well. We end up picking 26 pounds of apples!!! I know, I know that’s a lot of apples, but I love apples, so it won’t so hard to figure out what to do with them plus we gave half to our friend’s children who joined us. So I ended up with 13 lbs of apples in the end.

the next day, I got down to business and made 4 jars of apple sauce,and I made this lovely dish to share with all of you. I still have plans for some apple pie, I just need to pick up a pie plate.


Apple & Banana Bake with Nutty Granola

It’s a pretty loose recipe, feel free to play with it. You really can’t mess it up unless you burn it. It’s really easy to make and delicious to eat. It’s so delicious and easy, you just may find this dish creeping into your weekday route.

Servers: 2-4
Prep:5 minutes
Cooking time: 20-30 mins


2 apples, chopped
1 large ripe banana, chopped
2 heaping tbsp apple sauce


2 handfuls of rolled oats
1 handful of sunflower seeds
1 handful of pumpkin seeds
1 handful of whole almonds
1 small handful of hazelnuts
1 tbsp of coconut nut oil
1 tbsp of peanut butter
1 tbsp of honey or maple syrup
a pinch of salt

1. Preheat oven 275°F
2. Add chopped apples and banana into a baking dish. Add the applesauce and mix together.
3. Combine all of the toppings in a medium bowl, mix well.
4. Spoon the granola topping on the fruit. Ensure the whole surface of the fruit is covered
5. Bake for 25-30 minutes, let cool slightly or you will burn you tongue (this is experience talking here)
6. Serve with yogurt,fresh berries, or ice cream.

I love it with Laben. Laben is a soft cheese made from strained yogurt.
